I would like to know if there is a way to set up third party apps in the Windows kiosk mode without using an external software. Right now, when I select apps in the assigned apps sections, the list only includes Windows apps. I was wondering if there was an alternate way to add other apps.

If you're looking to use third-party (non-Microsoft Store) apps in Windows Kiosk Mode, the built-in options are pretty limited, as you’ve noticed—it mainly supports UWP apps from the Microsoft Store. To get around this, you might want to consider using a third-party tool or MDM solution like Scalefusion, which allows you to configure kiosk mode for traditional Win32 apps, set up custom scripts, and manage devices remotely, which can streamline the setup and enforcement of kiosk settings.

Thanks for the info! I tried creating a PowerShell script (as per this link: https://learn.microsoft.com/en-us/windows/configuration/kiosk-shelllauncher) and it executes without any errors.
However, I keep getting a blank screen every time I login to the account that is supposed to run in Kiosk Mode.

As far as I know, there is no official way to put 3rd party apps into kiosk mode, you need support from 3rd party software, but we cannot guarantee their security.
