Hi @Shaun Farrand ,
I don't have the environment to test it, so I found an article for your reference.

M365 Apps for Enterprise View-Only, Enable 'Edit Online' notification
Hi,
My organisation is switching to M365 Apps for Enterprise View-Only mode with company data in Sharepoint Online.
Does anybody know how to enable a notification in MS Office apps which essentially allows users to click 'edit online' for files hosted in Sharepoint which are then viewed in the M365 Apps for Enterprise View-Only suite? If multiple users open the same file hosted on Sharepoint a notification does appear in MS Word stating the following:
"COAUTHOR IN THE WEB APP, To reduce the possibility of merge conflicts or upload failures that may cause issues for you and your coauthors, switch to Office for the web." the notification then has a clickable link to 'Open in browser' or 'Learn more'. - I need something like this but with a more permanent solution rather than a notification that pops up if multiple users have the same document open.
I have had a look at DLP/Poilcy Tips, unfortunately I cannot seem to find a setting which allows a streamlined end user experience with a simple clickable button to edit the document online.
Thank you,
Shaun

The article provided only gives me information about co-authored behaviour for different applications in the MS Office suite. Is there any other information/testing you could recommend?
Than you.
