MDT only format C drive

We want to deploy new Windows 11 to our clients using MDT. But the computers have 2 to 3 drives: C drive is OS drive and others are data drives. Can we deploy OS only to C drive and remain other data drivers? We want to keep the data untouched.

    Per my experience, yes, we can format only C drive during the OS deployment. Firstly, we need to remove the "Format and Partition" steps in your task sequence. Then set the destination to a specific Disk 0 and Partition 1 (for example) in "Apply Operating System Image" step or add a "Run command line" step to wipe C drive. (Note: Please back up your data.)
