When you say :

My question is precisely : what is persisted to the cloud when I use Speech service ? I never found this information in the documentation.
Among the 4 items I listed in my post, which are kept on the server and which are not ?

@Morpheus Thanks for the details. For cognitive services that store customer, you have full control over the storage and deletion of any customer data that the cognitive services store as part of providing the services to you (GDPR Compliant – for this purpose, we, MS, would be the data processor). For cognitive services that do not store customer data, the customer data is automatically deleted after processing.

Cognitive Services are Azure services, and use is governed by the agreement under which you obtain the services. The Online Services Terms include the GDPR Terms, list the Microsoft Azure Core Services, and detail service-specific terms.

@@Morpheus From Data residency stand point, these services could be deployed in the Azure region specific to the end customer. In many cases, they could be deployed as containers even on-prem or any other hosting options.
