Its used for SMTP traffic and internal communications. Its important to renew it. I wrote here how to do that:

Hi, does anyone here know what the certificate called "Microsoft Exchange" is used for in Exchange?
This certificate is present by default in all servers when you setup the server but I now have a server where this certificate is about to expire.
It doesn't really have a name that I can relate to a certain function of the server. This certificate is applied to SMTP and IIS and is greyed out so I cannot edit that.
The server itself uses a third party SSL certificate (mail.customer.com) for all Exchange services (IMAP POP IIS SMTP) and all Virtual Directories are set to this DNS name.
I would like to know some more about this certificate and what would happen should it expire
