Excel: Exporting Show Changes Log

Hello all, it was suggested by a Microsoft Community Mod that I ask this here:

I have a SharePoint-stored Excel file that is used by my team to store which local restaurants are open on any given day, where the rows are the restaurants and the columns are the days of the month, with cells being "o" or "c" and comments on them being information specific to that day.

I want to offer an incentive program for my employees where every month, I'll calculate the percentage of the total contributions/edits for each employee over the course of the last month, then award a gift card according to this percentage. Something like 1% = $1, where an employee who did 25% of the work will get a $25 card. Or alternately, simply tally the changes and award 0.05c per cell changed (there's about 1600 cells per month).

Now that we're past the context, here's the actual question. Is there anyway I can export this log so that I can compile this data? It is not copy-able/select-able in the web version or the desktop version. I could use PowerAutomate to track changes to the file, but this often rolls multiple cell changes into one saved version.

Any thoughts on how I can best total the number of cell changes per user?
