This is solved. I've just checked again ~11 hours later and am now seeing the tables under Log Management. I'm assuming that either A) some time has to pass for the Logs tables to be created or B) a pipeline/activity needs to run in order to create an initial log. Either way, I can now query the logs. Also, it looks like there is no way to query historical data in the logs. It only starts tracking after the diagnostic setting is configured.

I do not see SynapseIntegrationPipelineRuns or SynapseIntegrationTriggerRuns tables in my Log Analytics workspace after creating a new Diagnostic Setting in Azure portal for my Synapse Workspace.
I've tried to follow the steps from this older post, but this is using a legacy version of the Log Analytics workspace page, where Logs used to be under a General group. I assume, the tables should be there relatively quickly, but I will wait 24 hours to see if something changes. I have Contributor privileges to the Resource Group, so I'm unsure what could be causing this.
