Patching standalone exchange server with one mailbox without DAG

We are in the process of migrating our mailboxes to Exchange Online. We will continue to use our third party archiver. We will have to have one mailbox on the hybrid server (Exchange 2019 cu12) for communication with Exchange Online and the on prem archive server.
Is this possible? How do I patch the hybrid server with the mailbox since I have to put in maintenance mode before patching? Can I purchase a standard exchange license, or do I need an enterprise license for the one mailbox?

    With one server, probably no need to put into maintenance mode. Thats really designed for DAGs.
