My company is currently using its old company name on our azure tenant and I was wondering if its possible to change the name on the OOBE screen to the new name without it breaking any other app or setup we have in our tenant

You can look at the name found at https://portal.azure.com. Navigate to Azure Active Directory – Company Branding. Here you can configure the name and other brandings visible when using AutoPilot.

No, OOBE screen is inside Windows OS installation. You can affect the screen after that, when computer picks up Autopilot profile if the device hash is imported correctly. There you can add logo and company name. This is done in AzureAD branding.
Apologies, let me rephrase my question, so its possible to change the name in the company name if its not the same with your Azure Tenant name correct ? if it can you give me details on how to do that ?
Company name is set in AzureAD company branding and that you will see in Autopilot profile identification phase.
