How many emails can be setup if I'm using 0ffive 365 business?

What exactly do you mean by the "emails" you mentioned here?

1. If you mean the limit of user counts in your organization, agree with Leon, the maximum number of users is 300 for Microsoft 365 Business. For more information, please check Service families and plans.
2. If you mean the count limit of mailboxes that could be configured in Outlook 365 desktop client at the same time, I'm afraid there might be no specific limit about it. It could be influenced by your computer hardware and some other factors and there is no official document explain this so far.
3. If you mean the limit of the Sent and Received Messages, as I know, there are indeed many limits about it (for example the max of messages received per hour is 3600). You can get more specific information in this article: Receiving and sending limits.
