Could you please tell us which subscription plan does your school have?
Do you have a Microsoft 365 subscription for Education that includes OneDrive for Business. - If yes, I suggest you try OneNote class notebook. Then you may share Content Library to students, that you can add and edit its materials, but for students, the notebook is read-only.
The reference is "Getting Started with the OneNote Class Notebook: A Walkthrough for Educators".
- If not, then you need to store your notebooks to OneDrive first, and then share them to students. When sharing the notebooks, please set "Can view" permission to prevent others from changing them.

If someone delete the oher stundent's note or my note, can i backup the note?
If you assign "Can edit" permission to shared students, to backup the notebooks, one way is exporting notebooks to your local computer via going to File > Export > Select Notebook and .onepkg format to export
.
Another way is using OneNote backup feature in OneNote Options > Save & Backup > Backup Folder
. The backup files will be under the Backup Folder.
