Folks - If I backup my inbox to a local PST file, does the Exchange server administrator get notified?

No. - if you are exporting to a pst from Outlook there is no logging of that.
If you are doing this from an Exchange Server using New-MailboxExportRequest, it will be logged in the Admin Audit Logs
I heard an exchange admin can use a checkbox on the server side to get notified of any Outlook exports to pst files
You are thinking of this and that is only when creating exports from the server.

Its not automatic and only if the user creating the export sets it.
