The only way to manage or customize Tamper Protection is through the Microsoft Intune , you may have a look at:
There is no Group Policy , however, you may file a report in the Feedback Hub app and file a suggestion and request this feature.

I have Server 2022 with the latest ADMX templates but I still can't find a GPO setting that will turn on Tamper Protection. I could find the registry that is involved and deploy that by GPP. However as a lot of other Anti-Virus settings can be done by having explicit settings, why not this?
I even asked Chat GPT but it kept telling the setting is in MAPS but it is not!!!
I tried to find any AV admx templates but could not.
