Outlook add-in logo/icon not updating after publishing updated manifest

We've recently updated our Outlook add-in manifest, which featured updated logos/icons.
There appears to be some sort of caching issue whereby any existing users of the add-in are still seeing the old logo.
Whilst we do not consider this to be a solution for our customers, we are aware of the solution offered here (leading to this documentation). We haven't been successful testing this fix for the Outlook App on MacOS.
One of the responses to the stackoverflow question mentions that the paths need to have changed for the images to update, in our case the paths have indeed changed so the issue is likely not related to that.

    Hi Folks,

    I am facing the same issue. what is the solution of the same. The AddIn updated logo Icon not reflecting on existing outlook desktop client. BTW its working fine for new users/clients.

    Resolved! just renamed the icon and update the manifest with updated name.
