What resources can I use to study AZ-900 if I'm struggling with some of the concepts in the official study material?
The official study material and documentation are great for studying for the AZ-900 but like you, I tend to look for different teaching styles especially when dealing with concepts that benefit from visual explanations.
My personal recommendation would be to go through the AZ-900 course by Adam Marczak on YouTube. You can see how popular it is by the comments and I really appreciate the use of visuals in all of the videos.
Give the videos a try (you can jump directly to whatever subject you are interested in if you want) and if you are still struggling with a concept, feel free to start a thread here in the forums and we'll do our best to help.
