Does MS Edge and MS365 office for Windows 10 and later get auto updated deployed via Intune or do we need to do any settings for that becasue I saw some settings under setting catalog for Configuration profiles?

    Yes. For Edge, it is needed to deploy a configuration profile "Update policy override default" to update.
