Microsoft Software View Different After Complete Reset

I'm not sure if this is a silly question or not, but here goes!

My laptop stopped working and the only resolution in the end was to completely reset it and not keep my files.

I have set it up, and signed into everything again (work account), but now when I log into Microsoft software the view is different.

I can confirm this is not just personalising them, and I confirmed with our IT that my co-workers (who have the view I am after) and I are on the same version Outlook etc - IT tried updating everything too. I have scoured through other Q&A's for answers, and any that resemble the same issue, I have followed those answers to no avail.

This is what they used to look like (this image is just taken from a different support page):

And this is what they look like now:

It looks like the webpages, or like an older version, but they are not. The way it is currently looks so blocky and I can't stand it. I mostly care about Outlook going back to the way it looked as I use it daily!

Our IT could not figure out how to change it back either, so I am desperately seeking an answer. Thank you!

Try to click the megaphone icon in the upper right, turn on the Visual Refresh, then restart Excel:
