Regardless of the question I asked in https://learn.microsoft.com/en-us/answers/questions/1320520/email-activity-for-users, I also hope you don't mind my asking some questions about the archive folder.
Does the archive folder in Outlook have something to do with the Online archive mailbox?
From this link: https://support.microsoft.com/en-us/office/archive-in-outlook-for-windows-25f75777-3cdc-4c77-9783-5929c7b47028, it seems the archive button only archives emails to the archive folder.
Are there other settings for users to automatically archive emails to archive mailbox?

On Exchange admin side you can consider creating and assigning Exchange retention policy to users to automatically archive old emails to their archive mailboxes.

While on end user side there is no built-in feature to automatically archive emails to archive mailboxes.
You may need to look for some solutions like VBA or third-party add-ins.
No, it does not. It was added to address similar functionality within Gmail, ignoring the fact that Gmail isn't even folder-based. And yes, all the Archive action does is move the message to the Archive folder... groundbreaking feature :)
If you want to move messages to the Online Archive instead, use retention tags/policies.
