The Hyper-V Extensible Switch protocol is added when you create a new external vSwitch, converting that physical port into a multi-port virtual switch and removing the internet protocols from the adapter. Connect your VMs to this vSwitch and configure the addressing of each VM's vEthernet in the same way you would a physical NIC.
The end user doesn't need to take any additional action, so I advise deleting and then creating a new vSwitch. The Hyper-V Extensible Switch protocol is added when you create a new external vSwitch, converting that physical port into a multi-port virtual switch and removing the internet protocols from the adapter. VMs should be connected to this switch.
