I have Windows 10 Pro and I have noticed that 3 Hyper-V (vEthernet) adapters has been created for each of my network adapters. I am not doing anything advanced with my W10 operating system like virtual machine, etc.

Hyper-V Virtual Ethernet Adapter

Windows 10 Feature - Hyper-V

Would uninstalling it or disabling it prevent internet access or cause problems?

When you create an external vSwitch the default option box is checked for Allow management operating system to share this network adapter. This creates an additional vEthernet for the host to use. So you have a couple of options, either go to the Virtual Switch Manager and uncheck these options or you can also delete the external vSwitch if it isn't needed, but also note that you can't delete the default switch.
