Is there a way to track the response times from a functional email box?

I have a functional mailbox where a number of users answer incoming emails. We want to track how many are replied to in a 48 hour period. Ie - Monday we received 50 emails, we replied to 38 of them within 48 hours. Is there a way to record this daily. Excluding the automatic reply we have set up.

I know there are some paid 3rd party software companies that can do this but due to the sensitivity of the inbox we can't allow companies other than MS. Do MS offer any sort of add on that can do this?

    As far as I know, there is currently no direct Microsoft add-on to track the number of responses over time.

    Email activity reporting provided by Microsoft 365 admin center has some limitations. You can only understand trends for the last 7, 30, 90, or 180 days. Additionally, you can export report data to an Excel .csv file by choosing the Export link. This will export data for all users and enable you to do simple sorting and filtering for further analysis.  More information, see: Microsoft 365 admin center email activity reports - Microsoft 365 admin | Microsoft Learn

    To access email activity reports in Microsoft 365 admin center, go to Reports > Usage page>Exchange > Email activity.
