It appears that with the update to the new MS word, the track change redlining shows deletions in the margin. Is there is a way to revert back to the old way of showing deletions (i.e strikes within the body of the document, vs bubble comments in the margin).

What's the version of your Word? Go to File >> Account >> About Word to check. I tested in Microsoft® Word for Microsoft 365 MSO (Version 2306 Build 16.0.16529.20226) 64-bit and Microsoft® Word 2021 LTSC MSO (Version 2306 Build 16.0.14332.20546) 64-bit, deletions still appear within the body of the document.

Unfortunately, your "latest update" doesn't tell us which one you are using. In Word 2021 and 365 here, version 2308, deletions appear as strikeout in the body.
You have to tell Word that you do not want the balloons (bubbles).
