How does clearing Word Cache help with SharePoint collaboration documents when the version history is keeping up to 500 versions on SharePoint?

We have many issues with word documents on SharePoint. Styles changing, missing heading numbers, formatting flipping to wing dings, etc. We are being told by our IT that if everyone has their word cache set to 1 day and delete on close that all our issues would go away. But we maintain up to 500 versions of said documents on SharePoint. How is that not a major problem. If SharePoint is caching word documents in a case of someone having cache setting set to 14 days, then the 100's of versions of the same file on SharePoint, would be the same caching issue. Can someone please distinguish how one is different from the other in affecting the styles and formatting and corruption of collaborated files.

The SharePoint Versioning is different from Office Document Cache.

For SharePoint On-premises,

When users use office client application to collaborate file, Office Document Cache will be stored in the Microsoft Office Upload Center. After collaboration, users upload the document into SharePoint On-premises, then a new version will be created in the document library.

For SharePoint Online,

When users use office client application or browser to collaborate file, AutoSave will save changes back to SharePoint Online document library directly.
