Hi Raguram,
Activity log entries are kept for 90 days and then automatically deleted. In order to retain them for longer you would've needed to export them to another location using diagnostic setting or other method. If you didn't do this then you will not be able to see entries from a year ago that would should which user created the VNet, exact date, etc.

Of course there are likely indirect methods to figure out the information. For example, you may be able to go back through past invoices/usage details/etc. and find evidence of resources that are related to the VNet and based on that piece together likely timeframe it was created.
