Transitioning on-premises to cloud only infra

I'm looking for an msft white paper or step by step guide to properly migrate SMB orgs to a cloud only infra. Customers are using M365, Azure for specific purposes, and I have a plan to gradually take down the on-premises environment to cloud only. I have read about the Windows Server ADDS part; I know how to setup the router for dns and dhcp purposes. But how to migrate the AD joined workstations to Entra AD join without re-installation, or integrating them into Intune. What about the central print server, how about the old file share showing up in user's explorer with the same granularity in permissions per folder (not using Azure VPN to support anywhere working)? That's what I'm looking for in the holistic step by step guide. Thx for solutions
