Hi,
I've had a look in the compliance center audit logs, but there doesn't seem to be an audit entry to show when a Teams user number was assigned/unassigned.
Are there any other places where this information my be logged?

2023-11-26T16:39:13.25+00:00 Whoops, I misread "number" as "member", apologies. The operation you should be looking for is "Changed setting by ConfigApi service". Unfortunately, this is a blanket category for a bunch of cmdlets/API calls, so it will include more than just changes to numbers. But once you have the list of events, you can export it and further narrow down by the details column, search for "telephone" or "number".
If you are comfortable by running this via PowerShell, it might be easier as you can use a free-text search therein:
Search-UnifiedAuditLog -StartDate (Get-Date).AddDays(-365) -EndDate (Get-Date).AddDays(1) -Operations "teamsadminaction" -ResultSize 5 -FreeText "telephone" -
