To create individual packages for Visio, Project, and Access without including any other Office products, you can use the Microsoft Application Virtualization (App-V) method. According to the Microsoft documentation, you can create a package that contains Office, Visio, and Project, and then use AppLocker to prevent specific users from using Visio and Project. Alternatively, you can create separate packages for each application and deploy them to different groups of users.
It is not possible to create individual packages for Visio, Project, and Access using the Office 365 client method without including any other Office products. When building a package in Configuration Manager, the same detection method is used for Microsoft 365 Apps, Visio, Project, and other products. Updating the detection method to be unique for each product is recommended, but it will not prevent other Office products from being installed or uninstalled.
