I would like to remove the ability for users to use Side bar apps / add ons

I have the exact same issue. After addressing this with support and showing them that the "Show Hubs Sidebar" control is useless regarding the ability to launch Sidebar apps, I was informed that there will be a setting to manage this feature coming with the upcoming Edge 122 version around the beginning of March 2024.

Some how users can get passed this and use Side bar. Any other ways to block it?
I have https://microsoftedge.microsoft.com/addons/Microsoft-Edge-Extensions-Home blocked from Group Policy. The other vector is right-clicking and selecting "Open in sidebar". This can be removed by creating a registry value at "HKLM\SOTWARE\Policies\Microsft\Edge" called "EdgeOpenInSidebarEnabled" (REG_DWORD) and setting it to 0. I'm being told that there will be more changes in version 125 to combat this issue as well.
Open the group policy editor and go to Administrative Templates > Microsoft Edge and then select Show Hubs Sidebar.
To block the sidebar and all sidebar apps, select Disabled.
To allow the sidebar, select Enabled.
I can confirm that as of Edge version 125, EdgeOpenInSidebarEnabled will interact correctly with https://microsoftedge.microsoft.com/addons/Microsoft-Edge-Extensions-Home. The buttons will appear greyed out and are now unclickable.
