My wifi is normally fine, I used to have a 1080p monitor, now I upgraded and swapped it for a 1440p one, I don’t use them both just one, but now I’m getting much much slower internet speeds when it spikes (below 1mb) and it just keeps spiking to around 5000 ping, does anyone have an idea?

As Dave already stated, this shouldn't be an issue, but my first idea was... how is everything connected? Are you using a USB C port replicator to connect all devices? Maybe the "traffic" on this channel is too high. USB typically has a very high throughput, but this can be an issue if rate/resolution/gaming runs in "parallel" with network traffic.
Just as an idea.

Please confirm if the multi monitors use more resources including cpu. You may try to turn down the screen resolution and check the result: Start > Settings > System > Display.
