We have setup a new environment for our Windows 10 kiosk devices. Can we specify to open our company home page when Microsoft Edge starts on these kiosk devices?

Yes, we can use the "Start Microsoft Edge with" option to choose which pages open when Microsoft Edge starts for kiosk devices:

Custom start pages: Enter the start pages to your company home page, such as http://www.contoso.com. Microsoft Edge loads the start pages you enter.

Also be sure to assign this Microsoft Edge profile to the same devices as your kiosk profile.
