I have a meeting created in a Teams channel - students (members) join the meeting with organization credentials, but they can admit guests
Is there any way to apply some policy to block this situation and prevent them from admitting guests?

You can try to set these students as Teams meeting attendee. I did a test in my environment, attendee has no right to admit guest to join the meeting.

It is a viable solution, but repeating it for all members (students) is tiring. We would need a button to make members all attendee

You could try to set the roles in Teams meeting. Before schedule the meeting, you can click Meeting options and set “only me” in “who can present”.
