Hi Shane Goodman I want to confirm with you if you mean File History is automatically turned off, without anyone changing the setting? Try to disable 3<sup>rd</sup> party software including anti-virus software, observe for a while and confirm the situation. It may be affected by 3<sup>rd</sup> party processes or compatibility problems.
Also, we can try to enable the file history via group policy and registry, then check the result.
- Turn off File History under below group policy location, and change the option to Not Configured or Disabled: Computer Configuration\ Administrative Templates\ Windows Components\ File History
