Not inspecting Microsoft Office 365 traffic

Question

How do other enterpise companies protect the coperate network, when Microsoft recommendation is to not inspect O365 traffic? This is the same for most SaaS providers, they require large subnets and FQDNs to be whitelisted and for this traffic to bypass inspection from SSL/DPI etc. Other than Teams UDP my thinking is to inspect all traffic, keen to know your thoughts on how to gain visibility if not inspecting through a proxy or IDP/S
