As part of our regular operations, there are instances where GPU support is not essential always, except 2 to 3 hours in a week randomly, we would like to temporarily disable the GPU feature to avoid unnecessary expenses when GPU support is not actively required. This would enable us to align our resources more closely with the specific requirements of our workloads and enhance the overall efficiency of our Azure VM deployments. is there any scheme where we can pay only for the GPU time used?

You cannot disable the GPU on a VM that is equipped with it and not pay for it. You would need to delete or stop your GPU enabled VM, and replace it with a non-GPU enabled VM.
