I recently switched to the new version of Outlook. When I start typing, sometimes I forget to capitalize the first letter of the sentence. In the classic version, this would automatically be corrected. How do I update my settings in the new version to do the same thing? Also, when I type the word I, I sometimes forget to capitalize, again, in classic version, this would automatically update. How do I change the setting in the new version?

Autocorrect and spelling options are not currently supported in the new Outlook client. The updated behavior that was built into the MS Editor is in this version but autocorrect/spelling are not there yet.

MS recommends you go to their community support site here and vote for the request(s) to add it.
