What is the difference between Product:Starter and Product:Unlimited in API Management services subscriptions?

could you provide details regarding the differences between Product:Starter and Product:Unlimited in API Management services Subscriptions? I cannot find the differences in the azure documentation.

These are just sample products that are auto-generated when you create a new APIM instance. You can read a basic description of them here.

The purpose of these is to give you 2 starter products that are configured accordingly. In general you should unpublish them and import your own product API. You can use the sample products to help guide your configuration of the product settings. Once you have your product(s) configured then you can either leave the sample products alone or remove them. It's up to you. Note however that once you delete a product it is gone so if you aren't sure whether you need it or not then don't delete it.
