Can anyone tell me if it's possible to assign an e-mail address to a domain.onmicrosoft.com Azure account?

Hello,
Yes, you can assign a Microsoft 365 business license to a domain.onmcirosoft.com e-mail address (you do not need to have a custom domain).
You just need to purchase one of the following licenses (at minimum):

The M365 Personal is a different system. If you have signed up for a business account, then you will get a domain.onmicrosoft.com e-mail address:
