I suggest that you initially refer to the documents "How many data warehouse units do I need" and "Finding the right size of data warehouse units" to determine the number of DWUs required.
Additionally, defining the Recovery Time Objective (RTO) for the production environment is crucial. If Automatic Restore Points do not meet your requirements, you might want to consider User-defined restore points.
