Working devops pipeline starts to fail with unrelated error

Question

We had a working build pipeline in Azure Devops, until today when the automatic build failed at the nuget installer stage.
After the automatic command "C:/Program Files (x86)/Microsoft Visual Studio/2019/Enterprise/MSBuild/Current/Bin/msbuild.exe" /version /nologo
we get "ERR:Invalid Version: 16.7.0.37604" and the NuGetToolInstaller task fails and so does the build.
