How can I create custom user properties in Entra?

I need to create custom user properties in Entra to map specific attributes to 3rd party software. Despite looking for a way to add new user properties, I've only been able to find the default ones. How can I create and store custom properties that I can then use as a source attribute when mapping via SCIM?

Ideally I would have 5-10 custom attributes, that can be used as a source attribute when creating mapping for SCIM. These are not security attributes, rather data like 'Is a manager' or 'Line manager ID'. Just general attributes for storing data related to employees outside of the defaults.
