Yes, you would just need to grant access to those mailboxes using the link above:

https://learn.microsoft.com/en-us/exchange/permissions-exo/application-rbac

You could create a mgmt scope for multiple mailboxes.

However, note the supported roles, it doesnt include shared so test with mail.read
