Game transfer between Xbox One and Xbox Series X

I am considering upgrading to an Xbox Series X from my Xbox One. While I know I can download my Xbox One games on the Series X, I'm not sure if I need to buy the X/S version of a game to play against my friends who have the X/S version they purchased directly on their console. An example of this would be Madden 24, x/s version vs Xbox one version.

Additionally, can I play against my friends who use the PS5?
