@Andrew Phillips The compliance offerings are listed in this document for all services.
AI studio uses almost all the Azure AI and ML service offerings to deploy various services. In your case, the Azure ML workspace is used to deploy the endpoint which should also be visible in the Azure ML studio if you use the same workspace as the project.
W.r.t AI studio as a standalone offering, it is still in preview. See the note below as mentioned in AI studio documentation.
Azure AI Studio is currently in public preview. This preview is provided without a service-level agreement, and we don't recommend it for production workloads. Certain features might not be supported or might have constrained capabilities. For more information, see Supplemental Terms of Use for Microsoft Azure Previews.
As per the supplemental terms for AI studio for 3rd party workloads.
Any third-party models that Microsoft makes available in the Model Catalog and/or Model Registry in the Azure AI Studio are Non-Microsoft Products subject to the terms for Non-Microsoft Products in the Microsoft Product Terms. Customer’s use of any model obtained or accessed through the Model Catalog and/or Model Registry is governed by the license terms provided in connection with the model.
I hope this helps!!
