With regards to slightly older versions of windows server (namely windows server 2016), is it still standard that Microsoft issue monthly patches every month for that version, or do patches become less frequent the older a version becomes, and more effort is made in patching newer products.

The reason I ask is we have received some data (based on get-hotfix) that suggests the last date an update was applied to a server running 2016, was December 2023, which we need to determine - is this because the last patches for 2016 were released around that time (i.e. November or December patch Tuesday), and there simply hasn't been any more recent patches issued for this version, or if there is an issue in the patching process for certain servers whereby updates are not being applied in a timely manner.

Is there anywhere we can get an accurate listing of all patches that have been released that plug vulnerabilities in server 2016 so I have something to cross reference?

Patches are released every month for every OS supported by Microsoft (including Windows Server 2016). They are as timely as for the latest OS versions.

Microsoft generally follows a monthly Patch Tuesday schedule, where they release security updates, bug fixes, and other patches for supported versions of Windows Server, including Windows Server 2016. However, as products age, the frequency of updates may decrease as Microsoft shifts focus to newer versions. Eventually, support for older versions may also end, meaning they no longer receive regular security updates.

As of my last update in January 2022, Windows Server 2016 was still receiving regular monthly updates. However, the last update for Windows Server 2016 could have been issued after that time, so it's important to check the latest information.

To determine if the last patches for Windows Server 2016 were released around December 2023, you can refer to Microsoft's Security Update Guide or the Microsoft Update Catalog. These sources provide comprehensive lists of all security updates and patches released by Microsoft, including those for Windows Server 2016. By searching for updates released around November or December 2023, you can verify if there were any patches issued during that time frame.

Additionally, if you suspect that there may be issues with the patching process on certain servers, you should investigate further to ensure that updates are being applied correctly. This may involve reviewing patch management policies, checking for errors in the update process, and monitoring update deployment to identify any issues.

In summary, to determine the accuracy of the patching status for Windows Server 2016 and to cross-reference the last patches released, you can consult Microsoft's Security Update Guide or the Microsoft Update Catalog. These resources provide detailed information on all updates issued by Microsoft for Windows Server and other products.
