How I can change my email I'd on Microsoft learning profile.

Click on your profile pic or initials (top right of the page). Select "settings" and you should see manage email preferences where you can change your address. Alternatively you can add multiple addresses and link/merge profiles (so you can always take your profile from work/school to a different work/school)

I've merged profiles and my MCID came with me. I haven't deleted any accounts so I'm not sure about that, you'd need to ask someone in Microsoft for a definitive answer
