Office 365 older builds to latest without losing components?

Just started a new contract, there about 5000 endpoints with different builds of office 365 as well as different patch level. Many of them has components like Visio standard and pro, Project standard and pro etc.

I was thinking about deploying the latest version without changing components so they can quickly reach the latest and same version. Would I need to use an XML to reflect the current components or is there a simple way to that?

Yes. I want to get passed all the missing updates and get the latest installed without having to remove what is already installed like Vision and Project

Figured out i can just use the basic Configuration.xml
