In which data center can I see them? I can't find them.

the VM SKU for 64 vCPU and 512 GB RAM are for instance:

Standard_E64d_v5

Standard_E64ds_v5

Source: Edv5 and Edsv5-series

This VM series should be available if almost every Azure region/Azure datacenter.

In which Azure region/datacenter you want to deploy the VM?

the VM SKU with 64 vCPU and 512 GB RAM Almost all Azure regions and datacenters should have this series of virtual machines available.

Standard_m64s 64 1024gib

Standard_m64Is 64 512gib

Standard_E64as_V5 64 512gib

Standard_E64ads_v5 64 512 gib
