Do we have to shut down the VMs to increase the size of a shared vhdx between them or disable the sharing then increase the size?

If you are running Windows Server 2012 R2 or older, then yes you will need to shutdown the virtual machines.
Since Windows Server 2016, you are able to dynamically resize shared VHDX while the virtual machines are online.

Yes, the hyper-v servers are windows 2012 R2.
