It is unclear what is going on with the forced install of Microsoft 'Meet Now'. I like Skype. Skype has an uninstall option. But when I do a new install I automatically get 'Meet Now' with no option to uninstall even though the machine has NO microphone or video camera. Here is what I do.
Immediately after install of a the new Windows 10 20H2 turn off your network connection. Then setup a policy rule to block the install/upgrade of Skype. Then uninstall Skype. Now go back and enable your network connection and think about turning off 'Delivery option' from 'other pcs'. Go ahead and update. You should not see 'Meet Now'.
I welcome 'Meet Now' on some machines. On some machines I do not want it. Please give me an option instead of having to banging away at some kludge installation.
