As we understand from your post, you need to unlink your certification from your previous organization.
Please be informed that you have contacted the Microsoft Certified Professional support forums. The support provided through this channel is limited to your Certification Profile and the achievement of the Certifications listed on our platform.
If your Certification Profile is linked to an organization through the Microsoft Partner Network platform, you could unlink your Profile from the Partner Center dashboard by selecting your user profile and then selecting the option "Remove access."
Alternatively, once your previous employer deletes your work account (AAD), your MCID will be automatically unlinked from their organization.
In case you are unable to access your previous work account to unlink your Certification Profile from the Partner Center, we invite you to contact the Microsoft Partner Network support team. You can contact this team by visiting: Partner Center.

In case you work account is linked to your profile on MS Learn, you can remove it from the “Account management” section.
